Chapati

Chapati is a staple food item here in Nairobi. It is the closest thing I can get to a tortilla so I am especially fond of it. They are like a tortilla and naan combined, but fried.

A few days, I learned how to make a version of chapati. This kind still includes oil, but in a more creative way, and is moreso baked. I was so happy with a rolling pin in my hand! A is another intern (and the only other American intern) at the Human Rights Commission. She technically works for the Institute, which is a program that publishes numerous academic human rights reports.

She lives in a guest house, and one of her housekeepers agreed to teach us how to make chapati. By the end of our lesson, I even got M, the housekeeper, to smile for a picture! That just hows how far enthusiasm will go. :) I attempted to translate the recipe (ie, 4 paddles of flour = 2 cups, etc.), so we'll see how it goes on my own!
